The grapes are usually harvested at the end of September and dried until the end of January. They then go through maceration and fermentation for nearly 30 days before the wine is aged in French oak barrels for 30 months.
Beautiful complexity of blackberries, cherries, ripe plum, cherry jam and balsamic with a very long, persistent finish.
